Get ready to enjoy a vibrant and delicious Korean classic! This Bibimbap Bowl is packed with flavor and colorful veggies, topped with a spicy Gochujang sauce. Here’s how to make it:

Ingredients:
For the Beef:

1 lb thinly sliced beef sirloin or ribeye
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp sesame oil
1 tbsp minced garlic
1 tsp grated ginger
1/2 tsp black pepper
For the Gochujang Sauce:

2 tbsp gochujang (Korean chili paste)
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or brown sugar
1 tsp minced garlic
1/2 tsp grated ginger
For the Bibimbap:

2 cups short-grain white rice
1 cup baby spinach, washed and chopped
1 cup bean sprouts, trimmed and washed
1 medium carrot, julienned or shredded
1/2 cup shiitake mushrooms, sliced
1/2 cup zucchini, thinly sliced
1/4 cup kimchi, chopped (optional)
2 eggs
2 green onions, thinly sliced
Sesame seeds, for garnish
Optional: sliced avocado, cucumber
Instructions:
Marinate the Beef:
In a bowl, combine the sliced beef, soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and black pepper. Mix well and let it marinate for at least 30 minutes.
Prepare the Gochujang Sauce:
In a small bowl, whisk together the gochujang, soy sauce, rice vinegar, sesame oil, honey (or brown sugar), minced garlic, and grated ginger. Set aside.
Cook the Rice:
Cook the short-grain white rice according to package instructions. Once cooked, set aside and keep warm.
Sauté the Vegetables:
In a large skillet, heat a little oil over medium heat. Sauté the spinach until wilted, about 1-2 minutes. Remove and set aside.
In the same skillet, sauté the bean sprouts for about 2-3 minutes. Remove and set aside.
Sauté the carrots, shiitake mushrooms, and zucchini until tender, about 3-4 minutes. Remove and set aside.
Cook the Beef:
In the same skillet, add the marinated beef and cook over medium-high heat until browned and cooked through, about 3-4 minutes.
Fry the Eggs:
In a separate pan, fry the eggs sunny-side up or to your preference.
Assemble the Bibimbap:
In a bowl, place a serving of rice at the bottom. Arrange the sautéed vegetables, cooked beef, and fried egg on top. Add kimchi if using.
Drizzle with Gochujang Sauce:
Drizzle the gochujang sauce over the top and garnish with sliced green onions and sesame seeds. Add sliced avocado or cucumber if desired.
Serve:
Mix everything together before eating to enjoy all the flavors!
