📝 Ingredients:
For the Chicken:

2 large boneless, skinless chicken breasts (or 4 small ones)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon paprika
2 tablespoons olive oil
For the Creamy Sauce:

2 tablespoons butter
1 small onion, finely chopped
2 cloves garlic, minced
1 cup sliced mushrooms (optional)
1 cup chicken broth
1 cup heavy cream (or half-and-half)
1 teaspoon dried thyme (or 1 tablespoon fresh)
½ teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ cup shredded cheddar cheese (or Parmesan)
For the Rice:

1 cup long-grain white rice
2 cups chicken broth (or water for a lighter taste)
1 tablespoon butter

Prepare the Chicken:
Season the chicken breasts with salt, black pepper, garlic powder, and paprika.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
Make the Creamy Sauce:
In the same skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms (if using) and cook for an additional 2-3 minutes.

In a separate pot, bring the chicken broth (or water) to a boil. Add the long-grain white rice and butter. Reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Combine Everything:
