Red Velvet Cheesecake Bites

Ingredients:
For the red velvet cake:

1 box of red velvet cake mix (plus ingredients listed on the box, usually eggs, oil, and water)
For the cheesecake filling:

8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 tsp vanilla extract
1 cup whipped topping (like Cool Whip)
For the coating:

1/2 cup white chocolate chips or chocolate coating (optional)
Red velvet cake crumbs (from the cake mix)
Instructions:
Make the red velvet cake:

Preheat your oven according to the instructions on the red velvet cake box (usually 350°F or 175°C).
Prepare the cake batter according to the box directions.
Bake in a 9x13-inch pan, as directed on the box, until a toothpick inserted into the center comes out clean (usually about 30-35 minutes).
Let the cake cool completely.
Prepare the cheesecake filling:

In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
Gently fold in the whipped topping until fully combined and creamy. Set aside.
Assemble the cheesecake bites:

Once the cake has cooled, crumble it into fine crumbs using your hands or a fork.
In a large bowl, mix the cake crumbs with the cheesecake filling. Start with about half of the cheesecake filling and add more if needed until the mixture holds together like dough.
Roll the cake and cheesecake mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Refrigerate for at least 1 hour to allow them to firm up.
Coat the bites (optional):

Melt the white chocolate chips in the microwave, stirring every 15-20 seconds until smooth and creamy.
Dip each cheesecake bite into the melted white chocolate, coating it completely. If you prefer, you can drizzle the white chocolate over the bites instead of dipping.
For extra flair, sprinkle the red velvet cake crumbs on top of the dipped cheesecake bites.
Chill and serve:

Return the cheesecake bites to the refrigerator for 30 minutes to allow the chocolate coating to set.
Serve and enjoy the creamy, sweet, and festive treat!
