Pizza Quesadilla Recipe

Ingredients:
2 large flour tortillas (or corn tortillas for a gluten-free version)
1/2 cup marinara sauce (store-bought or homemade)
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese (optional, for extra flavor)
1/2 cup mini pepperoni or your favorite pizza toppings (e.g., diced bell peppers, mushrooms, sausage, olives, etc.)
1 tablespoon olive oil (for cooking)
1/2 teaspoon dried oregano (optional, for pizza flavor)
1/2 teaspoon garlic powder (optional, for extra flavor)
Instructions:
1. Prep the Ingredients:

If using pepperoni or any other pizza toppings (like vegetables or sausage), make sure they are sliced or diced and ready to go.
Lay out your tortillas and set up your workspace for assembly.
2. Heat the Pan:

Heat a large skillet or frying pan over medium heat. Add 1 tablespoon olive oil to coat the bottom of the pan.
3. Assemble the Pizza Quesadilla:

Spread a thin layer of marinara sauce on one tortilla (leave a little room around the edges to avoid spilling).
Sprinkle 1 cup of shredded mozzarella cheese evenly over the sauce.
Add your choice of toppings (like mini pepperoni, sliced bell peppers, olives, or mushrooms).
Sprinkle a little Parmesan cheese (if using) on top for extra flavor.
Sprinkle dried oregano and garlic powder for more of a pizza flavor, if desired.
Place the second tortilla on top of the assembled ingredients, pressing gently to flatten.
4. Cook the Quesadilla:

Carefully transfer the assembled quesadilla to the heated skillet.
Cook for 2-3 minutes on one side, until the bottom tortilla is golden brown and crispy.
Carefully flip the quesadilla using a large spatula and cook for another 2-3 minutes on the other side, until the cheese is melted and the tortillas are crispy and golden.
5. Serve:

Remove the quesadilla from the skillet and let it sit for 1-2 minutes before slicing into wedges.
Serve with extra marinara sauce on the side for dipping.
