Chocolate Crêpes with Whipped Cream
Ingredients:

For the Chocolate Crêpes:

1 cup all-purpose flour
2 tbsp unsweetened cocoa powder
2 tbsp sugar (optional, for extra sweetness)
1/4 tsp salt
2 large eggs
1 1/2 cups milk (whole or 2%)
1/4 cup melted butter (plus more for cooking)
1 tsp vanilla extract
For the Whipped Cream:

1 cup heavy whipping cream
1 tbsp powdered sugar
1/2 tsp vanilla extract
Instructions:

Make the Chocolate Crêpe Batter:

In a medium bowl, whisk together the flour, cocoa powder, sugar, and salt.
In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Whisk until smooth.
Gradually pour the wet ingredients into the dry ingredients, whisking continuously until the batter is smooth and free of lumps. The batter should be thin and pourable—if it’s too thick, add a little more milk.
Let the batter rest for at least 30 minutes at room temperature (or up to 2 hours in the fridge) to allow the gluten to relax and ensure a smooth texture.
Cook the Crêpes:

Heat a non-stick skillet or crêpe pan over medium heat. Lightly grease with butter or oil.
Pour a small amount of batter (about 1/4 cup) into the center of the pan and immediately tilt the pan in a circular motion to spread the batter evenly into a thin layer.
Cook for about 1-2 minutes, until the edges start to lift and the bottom is set. Flip the crêpe gently with a spatula and cook for another 30 seconds to 1 minute on the other side.
Remove the crêpe from the pan and place it on a plate. Continue making crêpes, greasing the pan with butter between each one if needed. Stack the cooked crêpes and cover with a clean towel to keep warm.
Make the Whipped Cream:

In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
Using an electric mixer or whisk, beat the cream until soft peaks form (about 3-5 minutes). Be careful not to overwhip—stop when it’s fluffy and holds its shape.
Assemble the Crêpes:

Place a chocolate crêpe on a plate. You can fold the crêpe into quarters or roll it up, depending on your preference.
Top with a generous dollop of whipped cream, and feel free to drizzle with chocolate sauce or sprinkle with powdered sugar for an extra indulgent touch.
