Roxanne Quinteros Fideo Loco Recipe 

Ingredients:
1 teaspoon vegetable oil
1 (5-ounce) bag or box Fideo (or 7 oz for a heartier portion)
1 pound ground beef
4 ounces tomato sauce
1 tablespoon onion powder
1 teaspoon garlic powder
1 1/2 cups water
1 1/2 cups chicken stock
Instructions:
Cook the Fideo:
In a large skillet or pot, heat the vegetable oil over medium heat. Add the Fideo and toast it for about 2-3 minutes, stirring frequently, until it turns golden brown. Be careful not to burn it.
Brown the Ground Beef:
Push the toasted Fideo to one side of the skillet and add the ground beef to the other side. Cook the beef until browned, breaking it apart with a spatula as it cooks.
Add Seasonings:
Once the beef is browned, stir in the onion powder, garlic powder, and tomato sauce. Mix well to combine with the beef and Fideo.
Add Liquids:
Pour in the water and chicken stock. Stir everything together and bring the mixture to a boil.
Simmer:
Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 10-12 minutes, or until the Fideo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
Serve:
Once cooked, remove from heat and let it sit for a few minutes before serving. Enjoy your Fideo Loco warm!
