🥗 Crispy Chicken Mediterranean Salad 🍗

Ingredients:
For the Crispy Chicken:

1 pound boneless, skinless chicken breasts
Kosher salt and pepper, to taste
2 large eggs, lightly beaten
1 ½ cups seasoned breadcrumbs
⅓ cup finely grated Parmesan cheese
3 to 4 tablespoons olive oil
For the Salad:

6 to 8 cups spring greens or romaine lettuce
Kosher salt and pepper, to taste
1 cup cherry tomatoes, chopped
⅔ cup chopped cucumber
⅔ cup chopped pepperoncini
⅔ cup kalamata olives
⅓ cup crumbled feta cheese
¼ cup sliced red onion
For the Dilly Dressing:

3 tablespoons lemon juice
1 tablespoon red wine vinegar
1 tablespoon honey
1 teaspoon dill weed
2 garlic cloves, finely minced or pressed
Kosher salt and pepper, to taste
½ cup extra virgin olive oil
Instructions:
Prepare the Crispy Chicken:
Preheat your oven to 400°F (200°C).
Season the chicken breasts with kosher salt and pepper.
Set up a breading station: Place the beaten eggs in one bowl, and in another bowl, mix the seasoned breadcrumbs with the grated Parmesan cheese.
Dip each chicken breast into the egg, allowing excess to drip off, then coat with the breadcrumb mixture, pressing gently to adhere.
In a large oven-safe skillet, heat the olive oil over medium heat. Add the breaded chicken breasts and cook for about 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from the oven and let rest before slicing.
Make the Dilly Dressing:
In a small bowl, whisk together the lemon juice, red wine vinegar, honey, dill weed, minced garlic, salt, and pepper. Gradually whisk in the extra virgin olive oil until well combined.
Assemble the Salad:
In a large bowl, combine the spring greens or romaine lettuce, cherry tomatoes, cucumber, pepperoncini, kalamata olives, feta cheese, and red onion. Season with salt and pepper to taste.
Drizzle the dilly dressing over the salad and toss gently to combine.
Serve:
Slice the crispy chicken and place it on top of the salad. Drizzle with additional dressing if desired.
