Ingredients:

For the Cake:

1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
4 large eggs
3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/2 cup strawberry purée (blended fresh or frozen strawberries)
2 teaspoons vanilla extract
1 teaspoon strawberry extract (optional)
A few drops of pink food coloring (optional)
For the Strawberry Glaze:

1 ½ cups powdered sugar
2 tablespoons strawberry purée
1 tablespoon milk or heavy cream
Instructions:

Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
Cream the Butter and Sugar:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
Add Eggs:
Add the eggs one at a time, mixing well after each addition.
Combine Dry Ingredients:
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Mix Wet Ingredients:
In another bowl, combine the buttermilk, strawberry purée, vanilla extract, strawberry extract (if using), and food coloring (if using).
Combine Mixtures:
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk mixture. Start and end with the dry ingredients. Mix until just combined; do not overmix.
Pour into Pan:
Pour the batter into the prepared loaf pan and smooth the top.
Bake:
Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you can cover it loosely with aluminum foil.
Cool:
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Make the Strawberry Glaze:
In a small bowl, whisk together the powdered sugar, strawberry purée, and milk (or heavy cream) until smooth. Adjust the consistency with more milk or powdered sugar as needed.
Glaze the Cake:
Once the cake is completely cool, drizzle the strawberry glaze over the top.
