Ingredients:
For the Skewers:

1 lb beef tenderloin, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon oregano
For the Tzatziki Sauce:

1 cup Greek yogurt
1/4 cup chopped cucumber
2 cloves garlic, minced
1 tablespoon chopped dill
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Veggies:

1 bell pepper (any color), cut into 1-inch pieces
1 onion, cut into wedges
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Marinate the Beef:
In a bowl, combine the beef cubes with olive oil, paprika, garlic powder, salt, black pepper, and oregano. Mix well to coat the beef evenly. Let it marinate for at least 30 minutes.
Prepare the Tzatziki Sauce:
In a separate bowl, mix together the Greek yogurt, chopped cucumber, minced garlic, chopped dill, lemon juice, salt, and black pepper. Stir until well combined. Refrigerate until ready to serve.
Prepare the Veggies:
Preheat your oven to 400°F (200°C).
In a bowl, toss the bell pepper and onion with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer. Roast in the oven for about 20-25 minutes, or until tender and slightly caramelized.
Grill the Skewers:
Preheat your grill to medium-high heat. Thread the marinated beef onto skewers. Grill the skewers for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.
