🌯 The Greatest Jerk Chicken Burritos with Mango Salsa 🥭

Ingredients:

For the Jerk Chicken:

4 boneless chicken thighs (skin-on preferred)
Juice of 2 oranges
2 habanero peppers, sliced
¼ cup soy sauce
Salt to taste
1 teaspoon white pepper
1 teaspoon nutmeg
1 teaspoon dried thyme
½ teaspoon allspice
2 teaspoons brown sugar
2 garlic cloves, grated
1 teaspoon ginger, grated
2 scallions, chopped
2 teaspoons honey
For the Cilantro Lime Rice & Beans:

2 cups white rice, cooked
½ cup kidney beans, drained
¼ cup chopped cilantro
Juice of 2 limes
For the Mango Salsa:

½ mango, diced
1 Roma tomato, diced
½ red onion, diced
3 tablespoons cilantro, minced
Juice of 1 lime
For the Spicy Sauce:

¼ cup sour cream
2 tablespoons hot sauce (your choice)
1 tablespoon chopped cilantro
Juice of ½ lime
For the Fried Plantains:

1 ripe plantain, sliced into strips
Vegetable or canola oil for frying
Salt to taste
Additional Ingredients:

Shredded mozzarella cheese
4 large flour tortillas
Instructions:

Marinate the Chicken:
In a bowl, combine the orange juice, sliced habanero peppers, soy sauce, salt, white pepper, nutmeg, dried thyme, allspice, brown sugar, grated garlic, grated ginger, chopped scallions, and honey. Add the chicken thighs and marinate for at least 1 hour (or overnight for more flavor).
Cook the Chicken:
Preheat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-8 minutes on each side, or until fully cooked and charred. Remove from heat and let rest before slicing.
Prepare the Cilantro Lime Rice & Beans:
In a bowl, mix the cooked rice, drained kidney beans, chopped cilantro, and lime juice. Set aside.
Make the Mango Salsa:
In a bowl, combine the diced mango, diced Roma tomato, diced red onion, minced cilantro, and lime juice. Mix well and set aside.
Prepare the Spicy Sauce:
In a small bowl, mix together the sour cream, hot sauce, chopped cilantro, and lime juice. Adjust to taste.
Fry the Plantains:
In a skillet, heat vegetable or canola oil over medium heat. Fry the plantain strips until golden brown on both sides. Remove and drain on paper towels, then sprinkle with salt.
Assemble the Burritos:
Warm the flour tortillas. Layer each tortilla with cilantro lime rice & beans, sliced jerk chicken, shredded mozzarella cheese, mango salsa, and fried plantains. Drizzle with spicy sauce.
Wrap and Serve:
Roll up the tortillas tightly to form burritos. Serve with extra mango salsa and spicy sauce on the side.
