🍗 Grilled Chicken with Herb Rice & Roasted Vegetables 🥦

Enjoy a wholesome and flavorful meal packed with protein and nutrients! This dish is perfect for a healthy dinner. Here’s how to make it:

Ingredients:
For the Grilled Chicken:

2 boneless, skinless chicken tenders
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
Juice of 1/2 lemon
For the Herb Rice:

1 cup cooked white rice
1 tbsp olive oil or butter
1 tbsp fresh parsley, chopped
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
For the Roasted Vegetables:

1 cup broccoli florets
1 red bell pepper, chopped
1 carrot, sliced
1/2 red onion, sliced
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Instructions:
Marinate the Chicken:
In a bowl, combine the olive oil, garlic powder, paprika, dried oregano, salt, black pepper, and lemon juice. Add the chicken tenders and coat them well. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
Prepare the Roasted Vegetables:
Preheat your oven to 425°F (220°C).
On a baking sheet, toss the broccoli florets, red bell pepper, carrot slices, and red onion with olive oil, garlic powder, salt, and black pepper. Spread them out in a single layer.
Roast in the preheated oven for about 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
Grill the Chicken:
While the vegetables are roasting, heat a grill pan or outdoor grill over medium-high heat.
Grill the marinated chicken tenders for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks. The internal temperature should reach 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.
Prepare the Herb Rice:
In a small saucepan, heat the olive oil or butter over medium heat. Add the cooked rice, fresh parsley, dried oregano, salt, and black pepper. Stir to combine and heat through.
Serve:
Plate the grilled chicken alongside the herb rice and roasted vegetables. Enjoy your wholesome and nutritious meal!
