Ingredients:
For the Chicken:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup soy sauce
2 tablespoons brown sugar
2 tablespoons fish sauce (optional, but adds great depth of flavor)
1 tablespoon rice vinegar
1 tablespoon vegetable oil
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1/4 teaspoon red pepper flakes (optional)
12-16 wooden skewers, soaked in water for at least 30 minutes
For the Peanut Butter Dipping Sauce:

1/2 cup creamy peanut butter
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons honey or brown sugar
2 tablespoons lime juice
1 tablespoon sesame oil
1 clove garlic, minced
1/4 cup water (or more, to adjust consistency)
1/4 teaspoon red pepper flakes (optional)
Instructions:
Marinate the Chicken:
In a large bowl, whisk together soy sauce, brown sugar, fish sauce, rice vinegar, vegetable oil, turmeric, coriander, cumin, garlic powder, ginger powder, and red pepper flakes.
Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
Prepare the Peanut Butter Dipping Sauce:
In a bowl, mix together peanut butter, soy sauce, rice vinegar, honey (or brown sugar), lime juice, sesame oil, minced garlic, and red pepper flakes.
