Ingredients:

  • For the Chicken & Marinade:

    • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
    • 2 tbsp soy sauce (low sodium preferred)
    • 1 tbsp rice vinegar
    • 1 tbsp Sriracha (adjust to your spice preference)
    • 1 tbsp honey or maple syrup
    • 1 tsp grated ginger
    • 2 cloves garlic, minced
    • 1 tbsp cornstarch
  • For the Noodles & Vegetables:

    • 1 lb egg noodles (or ramen, udon, spaghetti - whatever you prefer!)
    • 2 tbsp vegetable oil (or peanut oil for extra flavor)
    • 1 red bell pepper, thinly sliced
    • 1 green bell pepper, thinly sliced
    • 1 small onion, thinly sliced
    • 2 cups broccoli florets
    • 1/2 cup chicken broth (or water)
  • For the Sticky Sriracha Sauce:

    • 2 tbsp soy sauce (low sodium preferred)
    • 2 tbsp Sriracha (adjust to your spice preference)
    • 2 tbsp honey or maple syrup
    • 1 tbsp rice vinegar
    • 1 tbsp sesame oil
    • 1 tsp cornstarch
  • Garnish:

    • 2 green onions, thinly sliced
    • Sesame seeds (black or white)

  • Large bowl
  • Wok or large skillet
  • Large pot
  • Whisk

Instructions:

  1. Marinate the Chicken (10 minutes prep): In the large bowl, combine the chicken pieces with the soy sauce, rice vinegar, Sriracha, honey/maple syrup, ginger, garlic, and cornstarch. Mix well to ensure all chicken pieces are coated. Let this marinate for at least 10 minutes.   5. Make the Sticky Sriracha Sauce: In a small bowl, whisk together the soy sauce, Sriracha, honey/maple syrup, rice vinegar, sesame oil, and cornstarch.

  6. Combine and Simmer (4 minutes cook): Pour the chicken broth (or water) into the wok with the vegetables. Scrape up any browned bits from the bottom of the wok. Add the cooked chicken and the cooked noodles to the wok. Pour the Sticky Sriracha Sauce over everything. Toss gently to coat all the noodles, chicken, and vegetables evenly. Bring the sauce to a simmer and cook for 2-3 minutes, or until the sauce has thickened and become glossy. Be careful not to overcook, or the noodles will get mushy.
