Stuffed Spicy Mango Salmon

Ingredients:
- 2 large salmon fillets, cut in the center to create a pocket
- 1 tbsp coconut oil
- 1 tbsp jerk seasoning
- Salt and pepper, to taste
For the Filling:
- 1 ripe mango, diced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup feta cheese, crumbled
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and minced
- Juice of 1 lime
- Salt and pepper, to taste

Directions:
1. Prepare the Filling: In a bowl, combine diced mango, chopped cilantro, crumbled feta cheese, finely chopped red onion, minced jalapeño, and lime juice. Season with salt and pepper. Mix well and set aside.
2. Stuff the Salmon: Cut a slit in each salmon fillet to create a pocket, making sure not to cut all the way through.
3. Fill each pocket with the mango and cheese mixture, pressing gently to pack it in.
4. Season the Salmon: Rub the outside of the salmon fillets with coconut oil. Generously coat both sides with jerk seasoning, adding extra salt and pepper if desired.
5. Cook the Salmon: Heat a skillet over medium-high heat with a drizzle of coconut oil. Place the stuffed salmon fillets in the skillet and cook for 4-5 minutes on each side, or until the salmon flakes easily with a fork.
6. Serve: Serve hot, garnished with fresh cilantro leaves or lime wedges for extra flavor.
